Make Your Own Whipped Cream Using Coconut Milk
Coconut Whipped Cream

Cutting down or eliminating dairy, but still want something to top a strawberry margarita or desert? Coconut milk makes just as thick and rich whipped cream as whipping cream, if not more! And the only different in preparation is to remember to put the coconut milk in the fridge long enough to chill.
An additional plus is that whipped coconut cream does not break down the way dairy does. This whipped cream can be covered and stored for up to a few days without separation taking place. That alone makes it a better option in my book!
Ingredients
- 1 Can Coconut Milk
- 2 Tbs Powdered Sugar
- 1/2 tsp Vanilla
Optional
- 1 tsp Matcha or
- 1 Tbs Cocoa Powder or
- 2 Tbs Pomegranate juice
Directions
- Set can of coconut milk and mixing bowl in the fridge overnight
- Set beaters in freezer for a few minutes before you begin
- Open can and remove all the solid coconut cream (leaving about 1/4 can of coconut water)
- Mix cream in chilled bowl, with chilled beaters until fluffy (3 minutes or so)
- Mix in powdered sugar and/or any other flavoring
- Use right away or cover and keep in the refrigerator for up to 3 days
Skinny Margarita on the Rocks

Ingredients
- 2 ounce(s) clear Tequila (Sauza or clear premium tequila)
- A splash of fresh lime juice
- A splash of Cointreau, Grand Marnier or Triple Sec
Directions
- Combine all ingredients over a glass of ice. Garnish with a lime wedge and salt (or sugar) if you’d like. Makes one serving. If you prefer a frozen Skinny Margarita, crush ice in a blender, then pour in ingredients.
Frozen Mango

Ingredients
- 1 (10-ounce) bag frozen diced mango
- 1/4 cup fresh lime juice
- 2/3 cup tequila (preferably silver, 80 proof)
- 2 tablespoons Cointreau or other orange liqueur
- 2 tablespoons superfine sugar
- 2 cups ice water
Directions
Put all the ingredients into a blender and blend until smooth.
Orange Margarita

- 2 ounces tequila
- 1 1/3 ouncesGrand Marnier
- 2/3 ounce fresh orange juice
- 1/3 ounce lime juice
Garnish:
- 1 slice of orange
- salt (optional)
Directions:

Salt may be applied to rim of glass if wanted. Just dip the rim into the liquour or lime juice then into salt.

Fill with ice cubes.

Add the rest of the ingredients and stir!

Enjoy!

Optional Straight up:.

Shake with ice. Strain into a cocktail glass.
Frozen Strawberry Margarita

Ingredients
- 6 fluid ounces tequila
- 2 fluid ounces triple sec
- 8 ounces frozen sliced strawberries in syrup
- 4 fluid ounces frozen limeade concentrate
Directions
- Fill a blender with ice and crush. Pour in the tequila and triple sec. Add the strawberries and limeade. Blend for 30 seconds or until smooth. Serve in margarita glasses with the rims dipped in powdered sugar.

Margarita – Top of the line
April 1, 2010- Two parts tequila (good tequila works the best)
- Half part Grand Marnier (this is a critical part… trust me, don’t go cheap on the citrus liqueur. Cointreau also goes very well, but really doesn’t have the same aromatic flavor that Grand Marnier has; try them side-by-side; they have totally different flavors… if you cheat here with Triple Sec or Orange Curaçao, you must add a dash of orange bitters!)
- Half part fresh lime juice.
- Half part fresh lemon juice.
- Half part simple syrup.
- Half part Limoncello (a fairly inexpensive type of lemon liqueur that isn’t sour but has lots of big citrus flavor… this is, I think, the secret ingredient in most restaurant margaritas— that extra citrus flavor adds a lot without making the drink more tart).
- Pinch of salt. Very little will go a long way… alternatively, rim the glass with coarse salt.
Mix with a bunch of ice cubes in a shaker and shake violently for about 15 seconds (until ice starts to crystallize on the outside of your metal shaker). Pour contents into an old-fashioned glass and, for a nice visual appeal, you can finish with a drop of grenadine (let it sink to the bottom for a sweet finish). Add a couple of skinny straws and a slice of lime if you like. Trust me!
Hint: too strong for your taste? Stir in some lemon-lime soda— don’t shake!

- 2 cups sweet and sour mix
- 1 cup triple sec
- 1 1/2 cups gold tequila
- 1/3 cup brandy-based orange liqueur (such as Grand Marnier®)
- 2 limes, quartered
Directions
- Salt the rims of 8 glasses. To do so, pour salt onto a small plate, rub the rims of the glasses with lime, and press them into the salt. Fill the glasses with ice.
- In a blender, combine sweet and sour mix, triple sec, tequila and Grand Marnier. Blend until smooth. Pour into glasses, squeeze a quarter lime into each glass, and serve.

1 1/2 oz 1800® Tequila
1/2 oz premium triple sec (preferably Cointreau)
1 oz lime juice
Rum the rim of a cocktail glass with lime juice, and dip in salt. Shake all ingredients with ice, strain into the glass, and serve.
